## Brasserie Cantillon — Il Tempio del Lambic, Bruxelles

Non è facile trovare le parole per descrivere la Brasserie Cantillon. Un punto di ripartenza, una colonna portante della cultura birraria, un luogo da visitare almeno dieci volte nella vita. Un **museo vivente** — lo è davvero — dove la passione e le generazioni della **famiglia Van Roy** hanno permesso la sopravvivenza e la rinascita dei **Lambic** e delle Gueuze.

Se dopo la forte crisi delle birre a fermentazione spontanea del Pajottenland del dopoguerra — che negli anni '80 ha portato alla quasi totale scomparsa di questi prodotti — è iniziata una lenta riscoperta del Lambic, lo dobbiamo in gran parte alla famiglia Van Roy. E in Italia lo dobbiamo anche a **Lorenzo Dabove (Kuaska)**, fra i primi ad innamorarsene e ad affiancare Jean Pierre Van Roy nella divulgazione.

_"Il **tempo** non rispetta ciò che si fa senza di lui"_ — recita la famosa scritta all'interno del birrificio. Il primo assaggio di Cantillon può sembrare respingente. Lascia passare qualche mese fra un assaggio e l'altro. Dopo un po', non potrai più farne a meno.
