West Coast IPA guide: style, recipe, and differences

What is a West Coast IPA?

West Coast IPA is a hopped beer style, clear with a sharp aromatic profile: pronounced bitterness, dry on the palate, aromas ranging from citrus to exotic fruit to resinous and pine notes. Golden color, medium-light body.

  • Color: light golden.
  • Aroma: citrus (orange, grapefruit), exotic fruit, resinous/pine notes.
  • Taste: sharp bitterness, dry finish.
  • ABV: typically 6–7.5%.

West Coast IPA vs NEIPA vs East Coast IPA

  • West Coast IPA: clear, bitter, dry, and very hopped. Malt is clean to highlight the hops.
  • Northeast IPA (NEIPA): hazy, soft, and very fruity. Less bitter, fuller body and perception of juiciness thanks to intense dry hopping and fuller malts.
  • East Coast IPA: vaguer term; often indicates beers balancing elements of both currents.

Typical hops

Citra, Centennial, Amarillo, Simcoe, Mosaic, Cascade. Citrus, resinous, and tropical notes.

Basic homebrewing recipe (20 L)

  • Grain bill: pale malt 85–90% + cara-pils or light crystal 10–15%.
  • OG target: 1.060–1.070.
  • Hop schedule: main bitterness in boil (60 min) + additions at 15/10/5 min + generous dry hop after fermentation.
  • Hops: Citra, Centennial, Amarillo, Simcoe.
  • Fermentation: neutral ale strain at 18–20°C for a clean profile.
  • Finish: clarified for the clear appearance typical of the style.

Quick FAQs

  • NEIPA — what sets it apart? Hazy, soft, less bitter; a "juicy" and opaque sensation, very different from the precision and dryness of West Coast.
  • Green Flash Citra? Green Flash is a brewery known for very hopped IPA; "Citra" indicates the use of Citra hops (strong citrus and tropical notes).
  • Storage? Keep cool and dark; fresh hops lose aroma over time — consume within 6–12 months.
