The spontaneous fermentations of Pajottenland are famous for being beers that are not easy to approach, for those who are not used to drinks with pronounced acidity or who would not expect to find such flavors in the glass strange, often described as salami skin, horse blanket, old playing cards, hematic, acetic, and whatever else you can think of. Here, Hanssens is one of the lesser-known producers,
although long-established, that perfectly embody the concept of extreme beers. Extreme because, especially in the examples with added fruit, they manage to achieve a very significant acetic acidity. Many more experienced drinkers are in love with the bottles from Geuzestekerij in Dworp, a locality in the famous municipality of Beersel, founded by Bartholomé Hanssens and remained hard and pure in its production choices. It cannot certainly be said that theirs are “entry level” products, but with the right experience and attention, one can come to appreciate many nuances.
