Lambiek Factory

Lambiek Fabriek is one of the modern producers of spontaneously fermented beers from Pajottenland. The opening dates back to 2016, although the founders Jo Panneels and Jozef Van Bosstraeten had the idea more than ten years earlier, obviously sipping a Geuze.
At the time, they were both working in other sectors, but, having known each other since childhood, they shared very formative experiences, which proved fundamental in the development of the project: every year they went to Burgundy to help some winemakers with the harvest. Hearing them talk about spontaneous fermentations and the traditional drinks of Pajottenland, the winemakers were happy to give them some barrels for the production of Lambic.
The first experiments date back to 2006-2007 and to the garage on Fabriekstraat – hence the name Lambiek Fabriek – that the two had transformed into their laboratory. Until 2015, they dedicated themselves to an increasingly in-depth study of the craft and, finally, from the following year we can enjoy their fantastic wild.
