Vault City is an independent craft brewery and the largest Scottish producer of modern, intensely fruity sour beers, located in the (sometimes) sunny Portobello, Edinburgh. 

Since 2018, the Vault City team has been dedicated to relentless exploration in craft beer production and, over the years, has developed its own house culture of yeasts and bacteria. Thanks to this mix of microorganisms, a base mixed fermentation beer was created, which pairs perfectly with the addition of fresh ingredients, such as fruit, which the brewery literally uses by the ton in its recipes. The goal is to expand the boundaries of what people typically expect from a beer.
