Ingredients (for 4-6 people)

  • 1.2 kg whole pork neck
  • 500 ml craft beer (see our recommendations below)
  • 2 carrots
  • 2 celery stalks
  • 1 yellow onion
  • 4 garlic cloves
  • 2 sprigs of rosemary
  • 3 bay leaves
  • 1 tablespoon tomato paste
  • 200 ml meat broth
  • Salt, black pepper, extra virgin olive oil

Preparation

1. The Marinade (overnight)

The night before, soak the pork neck in 330ml of beer with garlic, rosemary, bay leaves, and whole peppercorns. Cover and refrigerate for at least 8 hours. The marinade softens the fibers and infuses deep aromas into the meat.

2. Browning

Pat the pork neck dry with paper towels — surface moisture prevents browning. Heat a drizzle of oil in a large pot over high heat and brown the pork neck on all sides until a golden, even crust forms, about 3-4 minutes per side. Don’t rush this step: the crust locks in juices during the long cooking.

3. The soffritto

Remove the pork neck and add chopped carrots, celery, and onion to the same pot. Sauté over medium heat for 5-6 minutes, then add garlic and tomato paste. Cook for another 2 minutes, stirring until the paste darkens slightly.

4. Cooking with beer

Return the pork neck to the pot. Pour in the remaining 170ml of beer and the meat broth. Bring to a boil, then cover and reduce heat to low. Cook for 2 hours and 30 minutes to 3 hours, turning the pork neck every 45 minutes. The meat is ready when it easily pulls apart with a fork.

5. Sauce reduction

Remove the pork neck and let it rest covered with foil. Strain the cooking liquid and return it to high heat. Reduce until syrupy — about 10-15 minutes. Adjust salt and pepper.

6. Serving

Slice the pork neck thickly and generously coat with the reduced sauce. Serve with creamy polenta, mashed potatoes, or ricotta gnocchi.
