Ingredients (for 4 people)
- 1.5 kg of pork ribs (spare ribs)
- 500 ml of craft beer (see our recommendations below)
- 2 garlic cloves
- 1 onion
- 2 tablespoons of sweet paprika
- 1 tablespoon of smoked paprika
- 2 tablespoons of honey
- 2 tablespoons of Worcestershire sauce
- Salt, black pepper, extra virgin olive oil
- Fresh rosemary
Preparation
1. The marinade (minimum 4 hours, ideally overnight)
Mix 330ml of beer with sweet paprika, smoked paprika, crushed garlic, honey, Worcestershire sauce, salt, and pepper. Immerse the ribs in the marinade, cover with cling film, and refrigerate. The longer you marinate, the more the flavor penetrates the meat fibers.
2. Slow cooking in the oven
Preheat the oven to 160°C. Place the ribs in a large baking dish, pour in the remaining marinade and the remaining 170ml of beer. Cover with aluminum foil and cook for 2 hours and 30 minutes. Slow and moist cooking is the secret to meat that falls off the bone.
3. The final glazing
Remove the foil, raise the temperature to 220°C, and brush the ribs with the reduced cooking juices. Cook for another 15-20 minutes until the surface caramelizes. If you have a grill or BBQ, finish there for 5 minutes per side — the result is even better.
4. Resting
Let the ribs rest for 5 minutes before cutting. Serve with coleslaw, roasted potatoes, or cornbread.
