Ingredients (for 4 people)
For the meatballs
- 500g mixed ground meat (beef and pork)
- 1 egg
- 50g grated Parmesan
- 2 slices of stale bread soaked in milk
- 1 chopped garlic clove
- Chopped fresh parsley
- Salt, black pepper, nutmeg
For the beer sauce
- 330 ml craft beer (see our recommendations below)
- 400g peeled tomatoes
- 1 yellow onion
- 2 garlic cloves
- 1 carrot
- Fresh basil
- Extra virgin olive oil
- Salt, black pepper
Preparation
1. The meatballs
In a large bowl, mix the ground meat with the egg, Parmesan, squeezed bread, garlic, parsley, salt, pepper, and nutmeg. Work the mixture with your hands for 3-4 minutes until smooth. Shape the meatballs to the size of a walnut—about 40g each. Refrigerate for 30 minutes: resting helps them keep their shape during cooking.
2. The browning
Heat plenty of oil in a large pan over medium-high heat. Brown the meatballs on all sides until evenly golden—about 2-3 minutes per side. Do not cook them through: they will finish cooking in the sauce. Remove and set aside.
3. The sauté
In the same pan, add a drizzle of fresh oil and sauté chopped onion, carrot, and garlic for 5-6 minutes over medium heat until golden. The cooking residue from the meatballs will blend into the sauté, adding flavor.
4. The beer sauce
Raise the heat and pour in the beer. Let it evaporate for 2 minutes, stirring and scraping the bottom of the pan. Add the peeled tomatoes crushed by hand, basil, salt, and pepper. Bring to a boil, then lower the heat and let simmer for 10 minutes.
5. The final cooking
Dip the meatballs in the sauce, cover, and cook over low heat for 20-25 minutes, turning them gently halfway through. The sauce should thicken and coat the meatballs in a dense, glossy layer.
6. The serving
Serve the meatballs with their sauce over fresh pasta, soft polenta, or simply with crusty bread to soak up the sauce. Finish with grated Parmesan and fresh basil.
