- 1 golden onion
- 2 garlic cloves
- 2 tablespoons of butter
- 1 tablespoon of 00 flour
- 1 tablespoon of Dijon mustard
- 1 tablespoon of honey
- 1 teaspoon of Worcestershire sauce
- Salt, black pepper
- Fresh thyme
Preparation
1. The aromatic soffritto
In a small pot, melt the butter over medium heat. Add the finely chopped onion and cook for 8-10 minutes until golden and caramelized. Add the garlic and thyme, cook for another 2 minutes. This step is essential: caramelized onion gives sweetness and depth to the sauce.
2. The roux
Add the flour to the soffritto and stir vigorously for 1 minute until you get a golden mixture. This natural thickener will give body to the sauce without making it heavy.
3. The beer
Pour the beer slowly, stirring continuously to avoid lumps. Bring to a boil, then lower the heat and let simmer for 10-12 minutes until reduced by one third. The beer should concentrate, not evaporate completely.
4. The finishing touch
Add mustard, honey, and Worcestershire sauce. Stir and adjust salt and pepper. For a smoother sauce, blend with an immersion blender and strain. For a more rustic version, leave it as is.
5. Serving
Serve warm over steaks, burgers, ribs, roasts, or as a dip for fries. It keeps in the fridge for 3 days — reheat on low heat adding a splash of beer if it thickens too much.
