History and origins
Born in the 19th century in Vienna, this lager developed by combining continental malting and fermentation techniques. The Vienna malt — from which it takes its name — gives the characteristic balance between sweetness and light toast.
Organoleptic profile
- Color: from golden amber to copper.
- Aroma: biscuity/caramel malt with a subtle toasted touch; sober and floral hops.
- Taste: clean, malty, dry finish and light bitterness.
- Fermentation: low (lager), cold maturation for taste cleanliness.

Basic homebrewing recipe (20 L)
- Malts: 4.5 kg Pilsner + 1.0 kg Vienna malt + 0.25 kg Munich or light caramel.
- Hops: 20–30 g Hallertau or Saaz in two additions.
- Yeast: low fermentation lager. Target ABV: 4.5–5.5%.
- Process: infusion 65–67°C for 60 min → boiling → inoculation at 8–12°C → fermentation 2 weeks → lagering 0–4°C for 3–6 weeks.
