The Water of Pilsen: The Hidden Secret

The water of Pilsen is exceptionally soft and low in minerals. This allows Saaz hops to express their elegant spiciness without being masked by hardness or excessive minerality. Replicating this water profile is the first challenge for anyone wanting to produce an authentic Czech Lager outside Bohemia.

Decoction: The Process That Makes the Difference

Traditional Czech Lagers use decoction — a mashing technique where part of the wort is removed, boiled, and then reintroduced. This process:

  • Develops deeper and more complex malt notes (melanoidins)
  • Improves wort fermentability
  • Gives the typical body and roundness of the style
  • Requires more time and equipment compared to simple infusion

Saaz Hops: Unmistakable

Saaz (or Žatec) is the quintessential noble Czech hop. Characteristics:
