The secret of Karmeliet: the 1679 three-cereal recipe
What makes Karmeliet unique among all Tripels is its historic recipe: three cereals — barley, wheat, and oats — used both malted and raw. A formula documented in a manuscript from 1679 originating from the Carmelite monastery of Dendermonde, recovered and reinterpreted by Bosteels in a modern key.
Oats provide softness and roundness. Wheat adds lightness and foam. Malted barley brings structure and sweetness. The result is a layered beer where each cereal contributes to a balance difficult to replicate.

Bright golden color with creamy white foam. On the nose, a refined bouquet of vanilla, lemon, spices, and aromatic herbs. On the palate, it is fresh, light, and sweet, with notes of honey, malt, and fruit. The structure is fairly dry, with a long and pleasant finish where toasted malt, banana, and unripe peach emerge. Balanced, elegant, memorable.
