The Origins: Bavarian Cellars of the 19th Century

In the 19th century, Bavarian brewers sought to produce a clearer, more refreshing beer compared to the typical dark ales of the time. The solution was low-temperature fermentation in the cold cellars of the Alps, where yeasts worked slowly producing a cleaner and more stable beer.

The word lager literally means "warehouse" in German: the beer was left to mature slowly in the cellars (lagern = to store) for weeks or months before being served.

1842: The Pilsen Revolution

The decisive breakthrough came in 1842 in Pilsen (Bohemia, now the Czech Republic): brewer Josef Groll produced the first Pilsner Urquell, a golden and clear lager that revolutionized the beer world. For the first time, glassware — just becoming widespread — showed a bright and inviting beer. The success was immediate and the style spread throughout Europe.

Global Spread

Thanks to industrial refrigeration (late 1800s) and pasteurization, lagers could be produced and transported anywhere. Large industrial breweries adopted the style and brought it worldwide: today over 90% of beer produced globally is lager.

The Production Process: The Key to Quality

Slow, controlled fermentation at low temperatures (7–13 °C) allows yeasts to work calmly, giving lager its unmistakable clarity and freshness. The clean taste and slightly herbal aroma come from careful selection of grains and hops, as well as the purity of the water.

Lager Today: Between Tradition and Craftsmanship

Today lager beer is a staple on tables worldwide, offered in many variations — from Czech Pilsner to Bavarian Helles, from Vienna Lager to rustic Kellerbier.
