Preparation

1. The marinade (optional but recommended)

The night before, soak the shanks in 330ml of beer with rosemary, crushed garlic, and black pepper. Cover and leave in the fridge for at least 8 hours. This step softens the fibers and infuses aromatic depth into the meat.

2. Browning

Heat a drizzle of oil in a large pot over high heat. Pat the shanks dry with paper towels and brown them on all sides until evenly golden β€” about 4-5 minutes per side. Don’t skip this step: the Maillard reaction creates that crust that locks in the juices during cooking.

3. The soffritto

Remove the shanks and add roughly chopped carrots, celery, and onion to the same pot. SautΓ© over medium heat for 5 minutes, then add garlic and herbs.

4. Cooking with beer

Return the shanks to the pot and pour in the 500ml of beer. Bring to a boil, then reduce the heat to low, cover, and cook for 2 hours and 30 minutes. Turn the shanks every 45 minutes. The beer should simmer slowly, not boil.

5. Sauce reduction

When cooking is complete, remove the shanks and strain the cooking liquid. Return it to high heat and reduce it until syrupy β€” about 10 minutes. Adjust salt and pepper.

6. Resting

Let the shanks rest for 5 minutes before serving. Spoon the reduced sauce over and serve with soft polenta or roasted potatoes.
