Crispy bruschetta with fresh tomatoes paired with a light and refreshing gazpacho made with Lager beer. Two summer classics in one dish, ready in 15 minutes.
Ingredients (for 4 people)
For the bruschetta
- 8 slices of country bread
- 4 ripe tomatoes
- 1 clove of garlic
- Fresh basil to taste
- 3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
For the Lager gazpacho
- 500 g of ripe tomatoes
- 200 ml of cold Lager beer
- 1 red bell pepper
- ½ cucumber
- 1 clove of garlic
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of white wine vinegar
- Salt and pepper to taste
Instructions
- Gazpacho – Blend together tomatoes, bell pepper, cucumber, garlic, oil, and vinegar until smooth. Season with salt and pepper.
- Beer – Add the cold Lager beer to the gazpacho and stir gently. Refrigerate for at least 30 minutes before serving.
- Bread – Grill the bread slices on a griddle or in the oven until golden. Rub each slice with the halved garlic clove.
- Topping – Dice the tomatoes and season with oil, salt, pepper, and torn basil leaves.
- Assembly – Place the tomato topping on the bruschetta. Serve alongside a small bowl of well-chilled Lager gazpacho.
- Finishing touch – Drizzle with a little oil and garnish with fresh basil leaves. Pair with an ice-cold Maltese Lager!
