Bruschetta with Ricotta, Figs Caramelized in Dark Beer, and Honey
A refined and quick appetizer: fresh figs caramelized in craft dark beer, served on toasted bread with creamy ricotta and a drizzle of honey. Perfect for summer aperitifs or as an elegant starter.
Ingredients (for 4 people)
- 8 slices of rustic bread or baguette
- 6 ripe fresh figs
- 100 ml of craft dark beer (stout or porter)
- 250 g of fresh ricotta
- 2 tablespoons of wildflower or chestnut honey
- 30 g of butter
- 2 tablespoons of brown sugar
- Fresh thyme leaves
- Salt and black pepper to taste
- Extra virgin olive oil to taste
Instructions
- Cut the figs in halves or quarters. In a pan, melt the butter with the brown sugar over medium heat.
- Add the figs and let them caramelize for 2–3 minutes. Pour in the dark beer, stir, and let reduce over high heat for another 3–4 minutes until you get a thick, glossy glaze.
- Toast the bread slices in the oven at 200°C for 5 minutes, or on a grill. Rub lightly with a garlic clove if desired.
- Work the ricotta with a pinch of salt, pepper, and a drizzle of olive oil until creamy.
- Spread the ricotta on the bruschetta. Arrange the caramelized figs on top, add a few thyme leaves, and drizzle with honey.
- Serve immediately, still warm.

Recommended pairing
Perfect with a dark beer from the Maltese catalog — stout or porter — served cool: the roasted and chocolate notes of the beer enhance the sweetness of the figs and honey.
