Tuna Cous Cous with Craft Beer Marinade
A fresh and flavorful summer dish: tuna marinated in craft beer on a bed of herb cous cous, perfect for warm evenings.
Ingredients (for 4 people)
- 300 g cous cous
- 400 g fresh tuna (or in steaks)
- 330 ml light craft beer or Gose
- 2 tablespoons extra virgin olive oil
- 1 lemon (juice and zest)
- 1 garlic clove
- Fresh mint to taste
- Fresh parsley to taste
- Salt and pepper to taste
- Cherry tomatoes (a handful)
- ½ cucumber
- Black olives to taste
Instructions
- Marinade – Mix the craft beer with lemon juice, minced garlic, oil, salt, and pepper. Immerse the tuna and let it marinate in the fridge for at least 30 minutes.
- Cous cous – Prepare the cous cous with hot vegetable broth. Fluff it with a fork and season with oil, lemon zest, chopped mint, and parsley.
- Cooking the tuna – Drain the tuna from the marinade and cook it on a hot grill, 2–3 minutes per side. Keep it pink in the center.
- Assembly – Place the cous cous on the plate, add cherry tomatoes, diced cucumber, and olives. Lay the grilled tuna on top.
- Finishing – Drizzle with a little oil and fresh mint leaves.
