Fresh and light salad inspired by Middle Eastern cuisine: chickpeas, crunchy cucumber, fresh mint, and a tangy Gose beer vinaigrette. Ready in 10 minutes, no cooking required.
Ingredients (for 4 people)
- 400 g cooked chickpeas (or 1 drained can)
- 1 large cucumber
- 1 small red onion
- Plenty of fresh mint (a handful)
- Fresh parsley to taste
- 200 g cherry tomatoes
- 100 ml Gose beer
- 3 tablespoons extra virgin olive oil
- 1 lemon (juice)
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Vinaigrette – Mix the Gose beer with lemon juice, oil, cumin, salt, and pepper. Whisk well with a fork.
- Vegetables – Drain and rinse the chickpeas under cold water. Cut the cucumber into cubes, halve the cherry tomatoes, and slice the red onion thinly.
- Assembly – In a large bowl, combine chickpeas, cucumber, cherry tomatoes, and onion.
- Dressing – Dress with the Gose vinaigrette and mix well. Adjust salt as needed.
- Herbs – Add plenty of roughly chopped fresh mint and parsley. Gently mix.
- Rest – Let rest in the fridge for 15-20 minutes. Serve cold with an ice-cold Maltese Gose!
