Seitan Stew with Craft Beer
A rich and flavorful vegan main dish, where seitan braised in dark craft beer gains a surprising depth of flavor. 100% plant-based winter comfort food.
Ingredients (for 4 people)
- 400 g seitan pieces
- 330 ml dark craft beer (stout or porter)
- 2 carrots
- 2 celery stalks
- 1 yellow onion
- 2 garlic cloves
- 200 g diced potatoes
- 200 g canned peeled tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 2 sprigs fresh rosemary
- 2 bay leaves
- 3 tablespoons extra virgin olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons of oil in a large saucepan over medium-high heat. Brown the seitan pieces for 4–5 minutes until golden on all sides. Set aside.
- In the same saucepan, add the remaining oil and sauté chopped onion, garlic, carrots, and celery for 5 minutes.
- Add the tomato paste and smoked paprika, stir for one minute.
- Pour in the craft beer and let it reduce for 2–3 minutes, scraping the bottom.
- Add the chopped peeled tomatoes, potatoes, rosemary, and bay leaves. Return the seitan to the pan.
- Bring to a boil, lower the heat, cover, and cook for 40 minutes, stirring occasionally.
- Adjust salt and pepper. If the sauce is too thin, cook uncovered for another 5–10 minutes.
- Serve hot with fresh parsley and rustic bread or polenta.
