Savory vegetable tart with craft beer

Vegetable savory pie with craft beer is a simple, flavorful recipe that is perfect for making the most of seasonal vegetables. The beer adds aromas, a malty note, and greater depth to the filling, especially when paired with sweet vegetables and cheese.

It is ideal for a quick lunch, an aperitif, or an informal dinner. For the best result, choose a light or amber craft beer that is not too bitter, so it complements the vegetables without overpowering their flavor.

Ingredients for the vegetable savory pie with beer

  • 1 roll of puff pastry or shortcrust pastry
  • 1 zucchini
  • 1 bell pepper
  • 1 carrot
  • 1 onion
  • 150 g soft cheese or scamorza
  • 2 eggs
  • 100 ml heavy cream or creamy ricotta
  • 80 ml light or amber craft beer
  • extra-virgin olive oil
  • salt and pepper
  • herbs to taste

How to prepare the savory pie with beer

  1. Wash and cut the vegetables into cubes or thin slices.
  2. Soften the onion in a pan with a drizzle of oil, then add the carrot, zucchini, and bell pepper.
  3. Cook the vegetables for a few minutes, then deglaze with the craft beer. Let the alcohol evaporate and continue cooking until the vegetables are tender but still firm.
  4. In a bowl, beat the eggs with the cream or ricotta, then add salt, pepper, and herbs.
  5. Line a baking pan with the puff pastry or shortcrust pastry and prick the base with a fork.
  6. Spread the vegetables over the base, add the cheese, and pour over the egg mixture.
  7. Bake in a preheated conventional oven at 180 °C for about 35–40 minutes, until the surface is golden.
  8. Let the savory pie rest for a few minutes before slicing and serving.

Which beer should you use for cooking?

A craft lager, a blanche, or a delicate amber beer are suitable for this recipe. Beers that are too bitter or very alcoholic can make the filling too intense and overpower the flavor of the vegetables.

If you want a more aromatic pie, try an amber beer with malty and caramel notes. For a fresher, lighter result, choose a light beer or a spiced blanche.

How to pair the vegetable savory pie

Serve the pie warm with a fresh salad and a craft beer in the same style used for cooking. A clean lager pairs well with the vegetables, while a blanche enhances recipes with fresh, aromatic ingredients.

Frequently asked questions

Can I prepare the savory pie in advance?

Yes. You can prepare it a few hours ahead and serve it warm, or briefly reheat it in the oven before serving.

Can I use different vegetables?

Of course. You can replace or add eggplant, spinach, cherry tomatoes, broccoli, or leeks, while keeping the amount of liquid in the filling balanced.

Does the beer still contain alcohol after cooking?

Cooking significantly reduces the alcohol content, but it is not possible to guarantee that it will be eliminated completely. For an alcohol-free recipe, choose a 0.0 beer.
