Amber beer onion soup with bread and gratinated cheese

Amber Beer Onion Soup with Bread and Gratinated Cheese is a tasty and hearty dish, perfect for cold winter evenings. This recipe combines the sweetness of caramelized onions with the depth of amber beer, creating a perfect balance. Preparing this soup is simple, although it requires a little patience to allow the onions to develop their intense flavor.

Ingredients

  • 4 large onions
  • 50 g butter
  • 1 liter vegetable broth
  • 500 ml amber beer
  • 200 g bread
  • 150 g grated cheese (such as Gruyère or Parmesan)
  • Salt and pepper to taste

Preparation

Start by thinly slicing the onions. In a large saucepan, melt the butter over medium heat. Add the onions and cook them slowly, stirring occasionally, until they are soft and golden. This process takes about 20-30 minutes, but it is well worth it.

Once the onions are ready, pour the amber beer into the saucepan and increase the heat to evaporate some of the alcohol. Then add the vegetable broth and bring to a boil. Once the soup begins to simmer, reduce the heat and cook for another 15-20 minutes. Taste and adjust the salt and pepper as desired.

Preparing the Bread and Gratinated Cheese

Meanwhile, preheat the oven to 200°C. Slice the bread and arrange it on a baking tray. Cover the bread with the grated cheese and bake until golden and crisp, about 10 minutes.

Serving the Soup

To serve, pour the onion soup into deep bowls and place the slices of gratinated bread on top. The crispness of the bread contrasts beautifully with the soup's smoothness, making every bite a unique taste experience.

The secret to this Amber Beer Onion Soup with Bread and Gratinated Cheese lies in choosing the beer: opt for a quality amber beer, preferably craft, to enhance the flavors of the dish. Serve it hot and pair it with an amber beer of your choice for a perfect pairing.

Ingredienti

    Per la zuppa

    • Cipolle dorate — 1 kg
    • Birra artigianale ambrata dal profilo maltato — 330 ml
    • Brodo vegetale caldo — 1 litro
    • Burro — 30 g
    • Olio extravergine di oliva — 1 cucchiaio
    • Farina di frumento — 15 g
    • Timo — 3 rametti
    • Alloro — 1 foglia
    • Sale — quanto basta
    • Pepe nero — quanto basta

    Per la gratinatura

    • Pane rustico — 4 fette, circa 160 g
    • Gruyère o formaggio simile adatto alla gratinatura — 120 g

    Preparazione
