Masumi - Miyasaka Brewing Company
Masumi - Miyasaka Brewing Company (宮坂醸造) is one of the most prestigious and historically significant names in the entire Japanese sake landscape. Founded in 1662 in the city of Suwa, in the mountainous prefecture of Nagano, it boasts over 360 years of production excellence, led by the Miyasaka family from generation to generation.
Territory and raw materials
-
Water: pure meltwater from the Japanese Alps
-
Rice: over 90% grown locally by farmers in Nagano prefecture, mainly the local varieties Miyama Nishiki and Hitogokochi
The two production sites
Production is split between the historic Suwa brewery and the more modern Fujimi Brewery, built in the 1980s at 1,000 meters altitude to benefit from long, harsh winters — ideal conditions for slow, low-temperature fermentations that enhance elegance and aromatic complexity.
Philosophy and style
Masumi is renowned for a clean, balanced, and extraordinarily food-friendly style: sake designed to enhance food, not overpower it. Under the leadership of current president Naotaka Miyasaka, the brewery has launched a “return to origins” project: refining traditional methods, reducing environmental impact, and promoting international export to spread sake culture worldwide.
