Nuovo Birrificio Nicese — From Garage to Brewery, with the Territory in the Glass
Nuovo Birrificio Nicese was founded in 2006 by the passionate Carlo Colombara who, after years of home brewing, made the big leap with a business project that saw him engaged as a professional brewmaster. The range focuses on top-fermenting beers and gives ample space to creativity and typical local ingredients.
An excellent example: Dafne, a Blonde Ale that uses Cardo Gobbo — a rare and distinctive local ingredient that tells the deep connection with the land of origin.
Since 2016, with the opening of the taproom, the company has been officially known as Nuovo Birrificio Nicese.
