Oud Beersel — One of the Last Traditional Lambic Blenders, Since 1882
Founded in 1882, Oud Beersel is located in Beersel, just 10 km from the center of Brussels, in the heart of the Pajottenland — the region where spontaneous fermentation is possible thanks to a unique microflora in the Zenne valley.
It is one of the last traditional Lambic assemblers-blenders in Belgium, well known for its beers produced using methods unchanged for over a century.
The Process

Lambic — ferments spontaneously and matures for up to three years in wooden barrels, developing an unreproducible aromatic complexity

Oude Geuze — born from the masterful blending of Lambic from different vintages: dry, effervescent, sour, with great depth

Oude Kriek — sour cherries ferment in the Lambic; after a second fermentation in the bottle, a fruity, sour, and deep ruby beer is born
