Rochefort 8
Rochefort 8 — the green cap — is the Trappist beer from Brasserie de Rochefort, Belgium: the best-selling beer of the monastery, accounting for over 60% of total production of the brewery. First produced in 1954 at the request of a customer, it was so well received that it immediately became part of the abbey's regular production.
Brown with reddish highlights and fine, compact foam — on the nose, it opens with fruity and spicy notes ranging from vanilla to citrus to ripe fruit. On the palate, it is smooth and pleasant, with hints of caramel and licorice that envelop the sip. Despite the 9.2% ABV, Rochefort 8 is surprisingly drinkable, with a solid but never excessive body and a dry and bitter finish that leaves a pleasant aftertaste.
Tasting notes:
- Nose: vanilla, citrus, ripe fruit, spices, warm and enveloping notes
- Palate: smooth, caramel, licorice, integrated alcohol, dry and bitter finish
- Structure: brown with reddish highlights, medium-full body, Belgian Trappist, complex and drinkable
To be served at 10–12°C in a Rochefort glass or tulip glass. Perfect paired with aged cheeses, red meats, game, dark chocolate, and spiced desserts.
