Old Geuze
Oude Geuze — Spontaneous Fermentation Gueuze — Het Boerenerf
Oude Geuze is the Gueuze crafted by Het Boerenerf, an artisanal producer from the Pajottenland (Belgium) — the region southwest of Brussels that is the historic cradle of Lambic and spontaneous fermentation. Gueuze is a spontaneously fermented beer of Belgian origin: its distinctive feature is the blending of a young Lambic — usually about one year old — with at least one other more mature Lambic, often two or three years old. The blend creates an aromatic complexity that no single Lambic could achieve alone.
What Gueuze is and why it is unique
Gueuze is often called the Champagne of Belgium: like Champagne, it is made by blending different vintages, re-ferments in the bottle, and develops an extraordinary evolving complexity. Spontaneous fermentation — without added yeasts, only those present in the air of the Pajottenland — makes each batch unique and unrepeatable.

Sensory profile
On the nose it is complex and wild: citrus, fruity, and funky notes intertwine with cellar, wood, and leather aromas typical of Pajottenland Lambic. On the palate it is sour, dry, and refreshing, with lively carbonation that enhances the aromatic complexity. The finish is long, acidic, with a pleasant lingering cellar memory.
Why choose this Oude Geuze
- Het Boerenerf from Pajottenland — a producer rooted in the most authentic region for Lambic and Gueuze production
- Authentic spontaneous fermentation — no added yeast: only the wild microorganisms of the Pajottenland, impossible to replicate elsewhere
- Blend of different vintages — the complexity of Gueuze comes from blending: each bottle tells a story of years of patience
- Aging potential — like all great Lambics, it improves with time in the cellar
