Aecht Schlenkerla Kräusen: brewers call “Kräusen” the foam that forms during beer fermentation. Adding a small amount of this yeast-rich “young beer” to one that is finishing fermentation — called “aufkräusen” — allows reaching the highest organoleptic quality and the right level of carbonation. An unfiltered lager produced once a year: light amber color, great balance, and a pleasant smoky aftertaste.
