Nightster
Nightster — Irish Dry Stout | Birranova, Triggianello (BA)
An uncontrollable desire. A rush of adrenaline.
Nightster is Birranova’s Irish Dry Stout: a dark beer inspired by the great Irish tradition, built around the imagery of free and wild travel. Unexplored trails, air on your skin, nature in its most intimate form. A beer that plays on opposing sides — dark in appearance, light on the palate — and brings to the can the “on the road” spirit of brewer Donato Di Palma from Triggianello, in Puglia. Slow Food Snail Brewery 2025.
Sensory profile
Dark brown, with a creamy, persistent head that hints at the complexity of the profile. On the nose, roasted malts dominate with pronounced notes of espresso, dark chocolate and a light hint of burnt bread crust. On the palate, it is surprisingly light, lean and smooth — fully respecting the style’s Dry character. The opening reveals the roasted notes found on the nose and quickly turns toward a dry, clean and pleasantly bitter finish, due both to the roasting of the grains and the hops. A Stout that never feels heavy.

Who is Birranova?
Birranova Brewery was founded in 2007 in Triggianello (BA), a small hamlet of Conversano, in Puglia. Founded by brewmaster Donato Di Palma with a clear idea: beer should convey sensations, on the nose and palate, without ever forgetting drinkability. Head, heart, soul — three essential ingredients alongside water, malt, hops and yeast. A project that has led Birranova to earn recognition and appreciation beyond Italy’s borders, thanks to the many awards won over the years.
