Elderflower
Old Elderflower is the elderflower beer from Gueuze Tilquin, one of the most respected and sought-after gueuze beers in the world, produced in the Walloon Brabant of Belgium with the patience and rigor that only spontaneous fermentation can impose.
A beer with spontaneous fermentation achieved by adding an extraordinary amount of 125 grams of elderberries per liter — “sureau” in French, indeed — allowing the fruit to blend with the acidic and complex structure of the gueuze in a slow and inevitable marriage. Unfiltered, unpasteurized, bottle-conditioned: every aspect of the process is designed to preserve the life and complexity of a beer that never stops evolving. The elderflower brings floral, fruity, and wild notes that elegantly intertwine with the acidity of the lambic.
Tasting notes:
- Aroma: floral and fruity elderflower, wild acidity, funky lambic notes, white and wild fruit
- Palate: acidic, complex, prominent elderflower, fine tannin, very long and evolving finish
- Structure: spontaneous fermentation, lambic, 125g/l elderberries, unfiltered, bottle-conditioned
To be served at 10-12°C in a wine glass. Perfectly paired with aged cheeses, oysters, floral desserts, or enjoyed alone as a meditation beer.
