Robin Wood AB1 is the boldest beer from Beer 100Venti, a craft brewery in Borgomanero (Novara, Piedmont). This time, Oliviero Giberti and the 100Venti team have gone big: they started with a base of American Bianchina — their White IPA, a style that is quite unusual these days — inoculated it with a wild yeast, specifically Brettanomyces Bruxellensis, and left it in ex-Nebbiolo barrels for 12 months to referment and mature. The result is something more than just a simple White IPA.
The Process: White IPA + Brett + Nebbiolo
The combination of three distinct elements creates a unique aromatic profile: the White IPA brings aromatic hopping and wheat; the Brettanomyces Bruxellensis adds funky, earthy, and fruity notes typical of wild yeasts; the ex-Nebbiolo barrels impart tannins, notes of red fruit, and the complexity of great Piedmontese wine. Twelve months of patience for an unrepeatable result.
