La Volpe Bianca is born from the collaboration between Birrificio Sabino and the nearby Tenuta SantaLucia: the Trebbiano grapes provide their indigenous yeasts to the beer wort, leading a spontaneous fermentation that defines dryness, acidity, and rusticity. After eight months in the barrel and an equal time of bottle refermentation, it presents a beautiful straw yellow color with aromas of green apple, ripe peach, and vanilla. The sip is mineral and clean, with fine but lively bubbles.
