Nunc — Sour Ale with BUNNY Yeast and Ancient Grains — Ca' del Brado
Nunc is the Sour Ale crafted by Ca' del Brado, an artisanal brewery from Emilia-Romagna — and the first cans ever released from Ca' del Brado’s brewing cellar have also arrived on Maltese. A beer that tells a story of territory and experimentation: primary fermentation with the native BUNNY yeast (Bologna Unknown Native Naughty Yeast), followed by a period of fermentation and contamination in an open tank in the cellar, where it rests for refinement and maturation. Among the selected grains, besides Pale and Pils malts, there is also an unmalted wheat from the Grani Alti supply chain — ancient grains from the Tuscan-Emilian Apennines, specifically the Ardito variety.
BUNNY: the native yeast of Bologna
BUNNY — Bologna Unknown Native Naughty Yeast — is a wild yeast isolated and cultivated by Ca' del Brado in the Bologna area. A native yeast that carries the unique microbial character of that territory: rustic, expressive, unpredictable. The open tank fermentation adds further complexity, allowing the cellar’s airborne microorganisms to contribute to the final profile.
