Sauvages — Sour Ale with White Fir and Juniper — Brasserie Popihn x Cyclic Beer Farm
Sauvages was born from the collaboration between two excellent producers: Brasserie Popihn from Vaumort (Burgundy, France) and Cyclic Beer Farm from Barcelona (Catalonia, Spain). Both specialize in unconventional fermentations and unique additions, so the choice naturally fell on something Sour. Sauvages is created by blending several barriques containing a mixed fermentation beer, which has been infused with white fir and juniper branches from the forêt du domaine de Vaumorin — the forest next to the French brewery. Wild nature in a glass.
The Vaumorin Forest: the ingredient you can’t buy
The white fir and juniper branches are not purchased: they are gathered directly from the forêt du domaine de Vaumorin, the forest surrounding Popihn’s brewery in Vaumort. A zero-kilometer, seasonal, unrepeatable ingredient — changing with every harvest and every vintage.

On the nose, it is wild and foresty: the white fir brings fresh resinous and balsamic notes, the juniper adds an intense aromatic spiciness, while the mixed fermentation contributes its funky and acidic complexity.
