Sophia Lambic is born from the collaboration between Brasserie Cantillon and Cantina Giardino: a blend of pomace from Greco di Tufo with a two-year-old Lambic, macerated in amphora for about six months. The nose is strongly wine-like — with eyes closed, one might think of a structured red wine. With warmth and oxygen, it opens in the mouth with citrus and fruity notes and a controlled wild profile. In the same glass: Belgium and Italy, beer and wine.
