Vigneronne 2023 is the Druiven Lambic — Lambic with added grapes — crafted by Brasserie Cantillon, the legendary spontaneous fermentation brewery in Brussels (Belgium). When talking about Lambic, one always talks about Jean Van Roy and family: the brewer — and calling him just a brewer is an understatement — has established himself over the years as one of the most skilled producers of Druiven Lambic in the world. The grapes used come from France and mainly belong to the Muscat (White Muscat) variety, which makes this Lambic gentler, more elegant, and delicate compared to the more acidic and wild versions.
The technique: not a blend, but a refermentation
This bottle does not contain a blend of Lambics from multiple vintages, but rather a beer that undergoes refermentation thanks to the addition of a kind of “liqueur de tirage” — the same technique used in Champagne for the secondary fermentation. The result is a fresher and livelier Vigneronne compared to a traditional blend, with the Muscat notes standing out more clearly.
