Brasserie Cantillon — The Temple of Lambic, Brussels

It’s not easy to find the words to describe Brasserie Cantillon. A new starting point, a cornerstone of beer culture, a place to visit at least ten times in a lifetime. A living museum — it truly is — where the passion and generations of the Van Roy family have ensured the survival and revival of Lambic and Gueuze.

After the severe post-war crisis of spontaneous fermentation beers from the Pajottenland — which in the 1980s led to the near disappearance of these products — a slow rediscovery of Lambic began, largely thanks to the Van Roy family. And in Italy, we also owe it to Lorenzo Dabove (Kuaska), one of the first to fall in love with it and to support Jean Pierre Van Roy in spreading the word.

"Time does not respect what is done without it" — reads the famous inscription inside the brewery. The first taste of Cantillon may seem off-putting. Wait a few months between tastings. After a while, you won’t be able to do without it.
